Caramelized Banana Waffle Topping Breakfast Recipe

A light, fresh banana sauce that adds a regal touch to ordinary waffles. Excellent for just a few guests when you want to give a personal touch.


  • 3½ oz. butter, cut into pieces
  • 3 tbsp dark corn syrup
  • 3 large ripe bananas (not overripe), peeled and thickly sliced

Melt the butter with the corn syrup in a saucepan over low heat and stir until combined. Leave to simmer for a few minutes until the caramel thickens and darkens slightly. Add the bananas and mix gently to coat. Pour over wallles and serve immediately.

Variation: You may also use fresh peaches.

Yield: 2 servings (atop two waffles)
