Peel and dice the mango and pit and dice the avocados and place in a bowl. In a saucepan lightly sauté minced shallot just until slightly transparent. In a medium bowl, whisk the lime juice and olive oil together. Add the lime mixture to the mango and avocado and fold gently until coated.
Serve as a side to smoked salmon and scrambled eggs, or with any number of savory egg dishes.
Tip: Employ the best way to peel and dice mango and avocado that will minimize over-handling.
Yield: 2 to 4 small sides.
